Oatmeal Coconut Ranger Cookies

Why You’ll Love This Recipe

It’s been awhile since I made a batch of cookies that disappeared in a matter of hours, but that’s exactly what happened with these Oatmeal Coconut Ranger Cookies.

No one in the family could stop eating them! I had to give some to the neighbors to keep us from over-indulging!

I just took the last batch out of the oven and they are delicious…..my young grandchildren are going to be thrilled when they get home from school today!

Why are they called Ranger Cookies, you ask? I honestly don’t know. Come to think of it, I’m not sure how Cowboy Cookies got their name either.

But I’m pretty sure “ranger” and “cowboy” are code words for “soft, chewy cookie deliciousness.” Made with oats, Rice Krispies cereal and coconut, these cookies were an irresistible combination of crunchy and chewy.

And I’m not kidding when I say they were irresistible. I’m pretty sure my boys ate even more than I did!

Ranger Cookies

Even without chocolate chips, these cookies were amazing! But you could easily add chocolate chips.

I think they’d be especially wonderful with butterscotch or cinnamon chips. Or peanut butter. Or white chocolate chips. Or all of the chocolate chips!!!

These are fantastic, thanks for the recipe.

But they were honestly and truly delicious without any kind of chips at all. Which makes this a great cookie for adding all kinds of your own fun additions.

I always recommend baking cookies for the shortest time possible. I try and remove mine from the oven when they are just starting to turn golden.

You’ll definitely need to let these cookies rest on the cookie sheet for a few minutes, because they’ll be super soft at first. But once they cool, they’ll be perfect.

  • This a great ranger cookie recipe! They are crispy, sweet, salty, and chewy. Many other ranger cookie recipes are loaded with add ins (chocolate chips, corn flakes, nuts, etc). This recipe really allows the brown sugar and coconut flavors to shine through. I will definitely make these again.

  • What can substitute Rice Krispies?

Made this last night and Iโ€™ve already eaten 6… my mom also said they were the best cookies Iโ€™ve ever made so thank you for the recipe! I also added crushed walnuts to mine because I had some on hand and it was delicious.

Made these for my children. They are both in their 40’s now. Just like Annie, I bought them from the store and got hooked. Shortly after I found a recipe for them then I was really looking in trouble. Thanks for posting. Have a batch cooking now

  • We first discovered ranger cookies at our local grocery store. They stopped selling them after my husband got hooked on them. This recipe was the first one I tried when making our own. I found the dough to be a little dry\crumbly. They still taste fabulous but I will be trying them again with a little extra fat I think.

You have to cream the Softened butter, granulated sugar and brown sugar until fluffy. ****This is very important
Add other ingredients as stated in recipe.

I mix flour mixture until it is like a spread consistency, then add oats and coconut continue to mix and I mix well,
Finally mix rice crispy cereal in with a spoon to avoid crushing cereal.

Thanks for the recipe! Just wondering if the coconut is sweetened or unsweetened?

    Thank you!

  • I baked these cookies this weekend. I thought they needed more sugar, reading someone elseโ€™s comment I think they are right, there might be a mistake in the recipe and itโ€™s missing another cup of sugar or at least another half cup. You have to make sure that the cookies are very golden almost like a wheat color so that the taste of the coconut really pops. I want to try it again adding the sugar.

You are right, there was a mistake. There should have also been a cup of white sugar. Sorry about that! I’ve fixed the recipe to reflect the change!

  • I just took the last batch out of the oven and they are delicious. I was a bit confused because the instructions said “cream the sugars” but there is only one kind of sugar in the recipe. So I checked out another recipe for cowboy cookies and there were equal amounts of white and brown sugar. Anyway, my young grandchildren are going to be thrilled when they get home from school today! Thanks for posting this recipe.

I just want to say, what a great recipe! I am not very familiar with Ranger cookies myself, however, they sound utterly delicious! Especially since you have added the best flavor in the history of ever: Coconut! Keep up the wonderful deliciousness and thank you for sharing your culinary creativity!

P.S. I will be sending you a short email!

  • These are fantastic, thanks for the recipe
