Chorizo Chicken Chili

Say hello to my husband’s new favorite meal–Chorizo Chicken Chili. Actually, it’s pretty high on my list of all-time favorite meals too!

This originally started as a recipe for a simple chicken and chorizo soup, but I just kept adding ingredients–tomato paste, jalapeno, black and pinto beans–and the next think I knew I had a pot of delicious chili simmering on the stove.

The first time I made Chicken Chorizo Chili was for tonightโ€™s New Yearโ€™s Eve dinner for 14 people. Pretty risky trying out a recipe for the first time at a dinner party, but Letโ€™s Dish is my go to recipe blog and Iโ€™ve always been happy with the results.

My husband took one bite and proclaimed it the best soup I’d made in a long time. But he quickly corrected himself and said, “Not just soup…..this is the best thing you’ve made in a long time.”

First of all, I make a LOT of things. I’m always taste-testing new recipes on my husband and kids. And second, my husband doesn’t even like beans, and he still said this was the best dish I’d made in recent memory.

I don’t know how else to tell you that this chicken and chorizo chili is absolutely amazing!

Chorizo Chicken Chili

If I had to guess, I’d say that about 96% of the credit for the wonderful flavors in this chili goes to the chorizo–it’s simply packed with flavor!

And then when you add onion, jalapeno, oregano, chili powder, cumin and fresh cilantro to the rest of the ingredients and let it simmer on the stove-top for awhile, the result is the best chili you’ve ever tasted.

I froze a few portions for us to enjoy later, and it was just as tasty and comforting as the first time we ate it. So if you’re looking for a great freezer meal, this is it! This chili is also perfect for game day entertaining, or feeding any kind of crowd.

Be sure to offer lots of optional toppings for people to choose from. We like sour cream, shredded cheese, lime wedges, diced avocado, chopped green onions and tortilla strips or crushed tortilla chips.

Ingredients 

  • 1 tablespoon olive oil
  • 1 pound chorizo
  • 1/2 cup diced onion
  • 1 small jalapeno seeded and diced
  • 1 red bell pepper seeded and diced
  • 2-3 cloves garlic minced
  • 1 4 oz. can tomato paste
  • 6 cups chicken broth
  • 2 teaspoons chili powder
  • 1 teaspoon oregano
  • 1/2 teaspoon cumin
  • 1 tablespoon brown sugar
  • 1 15 oz. can black beans, rinsed and drained
  • 1 15 oz. can pinto beans, rinsed and drained
  • 2-3 cups cooked shredded chicken
  • Salt and pepper to taste
  • Chopped fresh cilantro
  • Optional toppings

Instructions

  • Heat olive oil in a large Dutch oven over medium-high heat. Add the chorizo and cook, breaking up as you go, until no longer pink.
  • Add the onions, jalapeno, red pepper and garlic and cook until the vegetables are tender, 5-7 minutes.
  • Stir in the tomato paste and cook until the mixture is a dark red, 5-7 minutes more. Slowly pour in the chicken broth and stir until the tomato paste is completely incorporated. Stir in the chili powder, oregano, cumin and brown sugar.
  • Add the beans and shredded chicken. Season with salt and pepper, to taste. Simmer for 20-30 minutes to blend the flavors.
  • Stir in chopped fresh cilantro just before serving, topped with your favorite chili toppings.
