Circus Animal Cookie Ice Cream

Frosted circus animal cookies are one of my all time favorites, so it only made sense, with warm weather setting in, to turn them into Circus Animal Cookie Ice Cream!

I don’t know what it is about those pink and white, candy coated cookies, but I’ve always loved them. I really can’t keep them in the house because I’d end up eating an entire package myself.

But when I decided it was time to break out the ice cream maker for the summer, the first thing I made was creamy vanilla ice cream, loaded with crushed circus animal cookies.

Needless to say, I was not disappointed. Instead of just one delicious treat, I got to enjoy two of my favorite desserts in one bowl!

And yes, I did finish off all the circus animal cookies that didn’t end up in the ice cream.

Circus Animal Cookie Ice Cream

Obviously this would be a fabulous ice cream to serve at any summer party of celebration. But don’t wait for a special occasion to make it.

Don’t even wait for warm weather! It’s that yummy! And so easy to make too. My youngest helped me with this recipe and we had it ready to go into the freezer in about 20 minutes.

Of course, waiting for it to set up is the hardest part. Sometimes, I just can’t wait, so I call it “soft-serve” ice cream and enjoy it before it even makes it to the freezer.

I use a Cuisinart ice cream maker (see the link in the recipe card), which I absolutely love. I just keep the bowl in my freezer, so it’s cold and ready to go whenever the homemade ice cream craving strikes.

My only complaint is that I wish I had a bigger version, so I could make more ice cream at once!

My whole family declared this Circus Animal Cookie Ice Cream to be one of their favorite homemade ice cream creations yet, and I wholeheartedly agree!

Circus Animal Cookie Ice Cream

Ingredients 

  • 3/4 cup whole milk
  • 1.5 cups heavy cream
  • 2/3 cup sugar
  • 1 teaspoon vanilla
  • Pinch of salt
  • 3/4 cup chopped frosted circus animal cookies

Instructions

  • In a large bowl, whisk together the milk, cream, sugar, vanilla and salt. Refrigerate until ready to use.
  • Transfer the mixture to an ice cream maker and freeze according to manufacturer’s instructions.
  • About 2 minutes before the ice cream is ready, add the chopped cookies. Transfer the ice cream to a freezer safe container and freeze until ready to serve.
