    Let’s Dish Easy Meal Plan (Week 28)

    Welcome to the Let’s Dish weekly Easy Meal Plan! Every Saturday, I’ll provide seven dinner ideas–one for every day of the week–plus two desserts to try during the week. To make your life even easier, every dinner idea will include a suggested side dish. Happy cooking!


    Week 28 Meal Plan

    -MONDAY-

    GREEK TURKEY MEATBALLS WITH SPINACH AND FETA — Ground turkey meatballs are loaded with feta cheese, spinach and Greek herbs and spices. Delicious served with orzo or flatbread.
    Side Dish Suggestion: Mediterranean Orzo Salad

    -TUESDAY-

    SAUTEED CHICKEN WITH FRESH PLUM SALSA — Pan sauteed chicken breasts are finished off with a sweet, fresh plum salsa. Perfect for when you’re eating light!
    Side Dish Suggestion: Kale and Almond Salad with Lemon and Parmesan

    -WEDNESDAY-

    EASY WONTON SOUP — This shortcut version of wonton soup uses frozen dumplings or wontons for a quick and easy Asian-style meal that’s ready in minutes!

    SLOW COOKER CHICKEN CURRY — This coconut milk based chicken curry simmers all day in the slow cooker for an easy, flavorful dinner. Serve with your favorite toppings!

    SLOW COOKER PEPPERONCINI BEEF SANDWICHES — Slow cooked shredded beef with spicy pepperoncini and Italian seasonings, topped with cheese and served on crusty rolls.
    Side Dish Suggestion: Cajun Roasted Potatoes with Creole Dipping Sauce

    THAI PEANUT PORK TENDERLOIN — Pork tenderloin is pan-seared, then finished off in the oven and glazed with a flavorful Thai peanut sauce.
