Today is my birthday! But I confess, I’m not much of a birthday cake girl. I’d take a pie or cheesecake or a Rice Krispies treat over a cake almost any day. Or this Birthday Cake Marshmallow Popcorn!

It’s got a gooey marshmallow coating (I just love gooey, melty marshmallows) with all the flavors of a birthday cake. My kind of birthday treat! Of course, you don’t need to wait for a birthday to make this delicious sweet treat!

It’s so quick and easy, and you probably have most of the ingredients in your pantry. If you’ve ever made Rice Krispies treats at home, this recipe is pretty similar.

You are going to need a very large bowl to stir everything together. I find a big roasting pan works really well too.

In fact, I prefer the roasting pan because it’s much easier to get all of the popcorn coated in the marshmallow coating. But either way will work!

If you’re like me and you have a bunch of random, half-empty bottles of sprinkles in your cupboard, this is a great way to use them up.

I usually just use a few bags of microwave popcorn to get my 6 cups, because that’s what typically have on hand.

But you can pop up regular popcorn kernels too. Just be sure, whichever kind of popcorn you use, to remove all of the unpopped kernels before proceeding with the recipe.

The only problem with this recipe is that once you start eating it, it’s hard to stop! But if it’s you’re birthday, it’s okay to indulge a little!

And even if it isn’t your birthday, it’s somebody’s birthday somewhere, which is all the reason you need to enjoy this amazing Birthday Cake Marshmallow Popcorn.

Recipe Tips

  • The easiest way to mix the popcorn and marshmallow mixture is with two large, greased wooden spoons. Toss the popcorn just like tossing a salad.
  • Store your popcorn in an air-tight container or zip-top bag at room temperature. Avoid storing the popcorn anywhere hot or humid, as it will go stale much faster. This popcorn is best eaten within a day or two, but can be kept up to a week if stored properly.
  • Don’t burn your marshmallows! Once the butter has melted and turn golden, lower the heat and melt the marshmallows slowly. Don’t rush this step!
  • This popcorn makes a wonderful birthday treat for friends, or a cute party favor. Simply place the popcorn in a clear cellophane bag and tie with a bow or some festive ribbon.

Ingredients 

  • 12 cups popped popcorn
  • 6 tablespoons butter
  • 6 cups miniature marshmallows
  • 1 tablespoon vanilla
  • 2 tablespoons milk
  • 2 cups white cake mix
  • Sprinkles

Instructions

  • Place the popped popcorn in a large bowl or roasting pan.
  • In a medium saucepan, melt the butter and marshmallows over medium-low heat, stirring constantly, until smooth.
  • Remove from heat and stir in vanilla, milk and cake mix. Stir until cake mix is dissolved.
  • Pour the marshmallow mixture over the popcorn and stir to coat evenly. Top with sprinkles and spread onto a large, parchment lined baking sheet to cool.

    How do you manage to keep the pop corn from going soggy once itโ€™s glazed? Does it work better to dry it in the lowest temperature oven for a while until it gets dry and crispy?
