We’re big fans of Chipotle at my house, and I love their corn salsa, so it’s about time I tried making Copycat Chipotle Corn Salsa at home.
No matter what I’m ordering at Chipotle–tacos, burritos, bowls–I always add some of their corn salsa. The great thing is, it’s super quick and easy to make at home. And you probably already have a lot of the ingredients on hand.
Usually I’m not a fan of canned corn (or any canned vegetables). I prefer frozen. But this recipe is an exception. It’s definitely better with canned corn, and tastes more like the Chipotle version too.
I like to use a mix of yellow and white corn, but use whatever you prefer or have on hand. Just be sure to rinse and drain your corn well before adding the remaining ingredients.
Like many salsa recipes, this one can easily be adjusted to suit your tastes, so feel free to adapt the amount of onion, jalapeno, lime and cilantro too.
This salsa is great on so many things–tacos, burritos, enchiladas, or as a side with tortilla chips. Sometimes, I just eat it with a spoon and call it a salad.
The best part is, you can whip it up in less time than it would take you to actually go to Chipotle and buy it. And it lasts for up to a week in the fridge!
This salsa is especially great for bringing along to summertime barbecues and potlucks, or even taking as part of a picnic to the beach or local park.
This simple recipe has become my simple go-to side–along with some tortilla chips–for almost every Mexican meal I make at home. Sometimes, I just eat this stuff with some tortilla chips for lunch.

Ingredients
- 2 cans corn rinsed and drained
- 1/2 cup diced red onion
- 1 jalapeno diced
- 1-2 tablespoons lime juice
- 1/3 cup chopped fresh cilantro
- Salt to taste
Instructions
- Combine all ingredients in a medium bowl and mix well. Refrigerate until ready to use. Serve with tortilla chips, or in tacos and burritos.
