But I also serve this appetizer during the holiday season, and when I put it out this past New Year’s Eve, it was the easy favorite, disappearing long before anything else on my buffet.
I have my friend and neighbor Kim to thank for this recipe. She brought it to an impromptu birthday celebration at my home and I confess, I ate quite a bit before the guests even arrived.

My friend Kim sprinkles her crostini with dried dill weed, and it’s absolutely delicious. But if I happen to have fresh dill on hand, I definitely use that as a finishing touch.
Just be warned, if you bring this crostini anywhere, you will get recipe requests, and will probably be asked to bring it to every gathering ever for the rest of your life. You’ll become the Cucumber Crostini Lady–or Gentleman!

Tips for Choosing and Storing Cucumbers
Appearance: Choose firm cucumbers with no soft spots, bruised flesh, or wrinkles. Also avoid white mold, or yellow spots, which may indicate that the cucumber is overly ripe and on the verge of rotting. A fresh cucumber doesn’t really have a smell. If it does, it might already be overly ripe.
Storage: Wash cucumbers and dry them completely. Once fully dry, cucumbers should be wrapped in dry paper towels or a dry, clean tea towel. Cucumbers should be stored in the refrigerator, but the warmest area of the refrigerator (usually near the front) is best. If they become too cold and freeze, they turn gelatinous and rot from within.

- Baguette slices
- Olive oil
- Salt and pepper
- Cream cheese
- Italian dressing mix
- Produce: cucumbers, fresh dill
Cucumber Dill Crostini
Ingredients
- 1 large crusty baguette cut into 1/4 to 1/2 inch slices
- 2-3 tablespoons olive oil
- Salt and pepper to taste
- 1 8 oz. package cream cheese, softened
- 1 .7 oz. package Zesty Italian Salad Dressing Mix
- 1-2 large cucumbers thinly sliced
- Fresh or dried dill for garnish
Instructions
- Preheat oven to 400 degrees. Line a sheet pan with parchment paper.
- Lay the baguette slices on the pan in a single layer and brush both sides with olive oil. Sprinkle with salt and pepper, if desired.
- Bake for 7-10 minutes, or until bread is golden and slightly crispy; cool completely.
- Meanwhile, combine the cream cheese and Italian Dressing mix in a medium bowl. Spread cream cheese mixture over cooled baguette slices.
- Layer 2-3 cucumber slices over the cream cheese. Sprinkle with fresh or dried dill before serving.
