There is nothing I love more on a chilly evening than this hearty, healthy Sweet Potato, Quinoa and Chicken Chili simmering in the slow cooker.
This is one of those blessedly easy recipes where you just throw everything in the slow cooker and walk away. Which is a lifesaver when you’ve got busy mornings and afternoons and evenings loaded with school concerts and sports.

Plus this chili is loaded with nutritious ingredients like sweet potatoes, quinoa and black beans, and seasoned with Southwestern spices for a unique and delicious meal.
Even if you opt to make this a vegetarian dish, it’s still full of protein thanks to the black beans and quinoa. You can also substitute ground beef for the chicken if you’d like a more traditional chili.
I happily ate the leftovers for lunch for several days and it just seemed to get better and better.
I use a rotisserie chicken for this recipe, which calls for cooked shredded chicken, but you could certainly start with whole, uncooked chicken breasts.
Just let the chicken cook right in the slow cooker with the rest of the ingredients, then pull them out and chop or shred them shortly before serving.
Another favorite shortcut–see if you can find already diced sweet potatoes in the produce section at the grocery store. Okay, it won’t take that long to peel and chop two potatoes, but I’ll take I’ll the help I can get.
This is great with traditional chili toppings, like sour cream and cheese, but I honestly prefer it without, so do whatever suits your tastes! A side of homemade cornbread will make this meal complete.

- Quinoa

- Black beans
- Canned diced tomatoes
- Spices: chili powder, cumin, oregano, onion powder, cayenne pepper, salt and pepper

Sweet Potato, Quinoa and Chicken Chili (Slow Cooker)
Ingredients
- 4 cups chicken broth
- 1/2 cup uncooked quinoa
- 2 medium sweet potatoes peeled and diced
- 1 15 oz. can black beans, drained and rinsed
- 1 14.5 oz. can diced tomatoes
- 1 cloves garlic minced
- 1 tablespoon chili powder
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- 1/2 teaspoon onion powder
- 1/4 teaspoon cayenne pepper
- 2 cups cooked shredded chicken
- Salt and pepper to taste
Instructions
- Add everything but the salt and pepper to a lightly greased slow cooker.
- Cook on low for 6-8 hours, stirring occasionally. Just before serving, season with salt and pepper, to taste.
