Welcome to the Let’s Dish weekly Easy Meal Plan! Every Saturday, I’ll provide seven dinner ideas–one for every day of the week–plus two desserts to try during the week. To make your life even easier, every dinner idea will include a suggested side dish. Happy cooking!


Meal Plan 43

-MONDAY-

EASY PEANUT CHICKEN STIR-FRY — Rice noodles, chicken and vegetables are tossed in a zippy peanut sauce in this Asian inspired recipe that’s on the table in about 30 minutes.
Side Dish Suggestion: Indian Naan Bread

-TUESDAY-

SLOW COOKER BEEF RAMEN — Tender chunks of beef are slow cooked with mushrooms in a flavorful broth, then combined with snow peas and ramen noodles in this light yet hearty soup.
Side Dish Suggestion: Lemon Garlic Bread

-WEDNESDAY-

SLOW COOKER HAWAIIAN PORK — Slow cooked pulled pork in a sweet and tangy pineapple, brown sugar and soy sauce glaze.

-THURSDAY-

BEEF PINEAPPLE CURRY — Thinly sliced beef with pineapple chunks and red peppers in a creamy, coconut milk based curry.

PIZZA ROLLS — Stuffed with pepperoni and shredded cheese, these pizza rolls are a big hit with kids and grown-ups alike.  They’re perfect as an appetizer or a main dish with a side of marinara for dipping.
Side Dish Suggestion: Kale and Almond Salad with Lemon and Parmesan

CHICKEN AND SPINACH ENCHILADAS — A cheesy chicken and spinach mixture is rolled in flour tortillas and baked in a creamy green chile sauce.

-SUNDAY-

SLOW COOKER HONEY GLAZED HAM — Moist, delicious spiral sliced ham, slow-cooked in a spiced honey glaze.

-DESSERT-

FROZEN RASPBERRY LEMONADE PIE — This sweet and tart no-bake dessert is made with vanilla ice cream and frozen lemonade concentrate. It’s the perfect summer dessert!
