Summer is just around the corner, and I don’t know about you, but I’m ready to start cooking outside!
Or more accurately, I’m ready for my husband to start cooking outside. One of my favorite things about grilling season is that he usually takes over food prep and cooking.
Why I Love Meal Planning
- Meal planning saves money — when I plan my meals and go to the grocery store with a list, I’m less likely to fill my cart with more expensive prepared foods, or items I don’t need or won’t use.
- Meal planning saves time — at the grocery store at least. It does require some time up front, but once you start shopping, you’ve already decided what to make, and don’t have to figure it out while your standing in the aisles of the supermarket.
- Meal planning saves your sanity — If you get tired of hearing “What’s for dinner” repeated multiple times every evening, meal planning will fix that! I actually place my weekly meal plan on a large magnetic board in my kitchen so everyone can see what’s being served that day.
He even does the grocery shopping. And the dishes! I still take care of the menu planning though. So this meal plan includes some family favorites that we’ve been waiting to make all winter.

Ideas for Using Leftovers
- Balsamic Chicken: The possibilities here are endless. Top a Caesar salad with leftover chicken. Or use it for tacos, soups, casseroles and pasta bakes. This is a great recipe to double, just so you have extra to use during the week.
- Pork Chops: Our favorite way to use leftover pork chops is to thinly slice them and add to stir fry or ramen.
- Flank Steak: We usually to do something Mexican-inspired with leftover steak. Think tacos, burritos or tostadas. Leftover flank steak is also great for stir fry, fried rice and soup.
