If you’re like me, you try to add a few meatless meals to your dinner plans every week.
There are plenty of good reasons to cut back on meat in your diet. For one, it can be a fairly budget friendly way to eat.
My kids are grown and living on their own now, but when I was feeding three hungry teenage boys, I was always looking for economical ways to save on meals.
Why I Love Meal Planning
- Meal planning saves money — when I plan my meals and go to the grocery store with a list, I’m less likely to fill my cart with more expensive prepared foods, or items I don’t need or won’t use.
- Meal planning saves time — at the grocery store at least. It does require some time up front, but once you start shopping, you’ve already decided what to make, and don’t have to figure it out while your standing in the aisles of the supermarket.
- Meal planning saves your sanity — If you get tired of hearing “What’s for dinner” repeated multiple times every evening, meal planning will fix that! I actually place my weekly meal plan on a large magnetic board in my kitchen so everyone can see what’s being served that day.
A meal plan isn’t very effective if you don’t keep it someplace you can see it, so be sure to download my FREE printable meal planner before you get started.
Plus, cutting back on meat can be good for your health. Personally I couldn’t ever totally give up meat–because bacon. But I’m all for enjoying delicious vegetarian dishes on a regular basis.

Ideas for Using Leftovers
- Three Cheese Stuffed Shells: This recipe makes enough to feed a small army, so I like to prepare one pan to cook that day, and another pan to put in the freezer for another meal.
- Easiest Ever Black Bean Soup: There are all kinds of things you can add to this soup to make any leftovers a little more exciting. If you aren’t set on going meatless, feel free to throw in some protein, like chicken, shrimp or chorizo. Corn, bell peppers and diced sweet potato are all great vegetarian additions.
- Three Cheese Garlic Noodles: This is another dish you can easily add protein or additional vegetables to. We love peas and asparagus. If you want to add meat, chicken, prosciutto or smoked sausage are great options.
