Personally, I love this time of year–when the weather warms up and my local farmer’s market opens. I’m always anxious to get cooking and baking with spring produce, like berries, asparagus, rhubarb and leafy greens.
Why I Love Meal Planning
- Meal planning saves money — when I plan my meals and go to the grocery store with a list, I’m less likely to fill my cart with more expensive prepared foods, or items I don’t need or won’t use.
- Meal planning saves time — at the grocery store at least. It does require some time up front, but once you start shopping, you’ve already decided what to make, and don’t have to figure it out while your standing in the aisles of the supermarket.
- Meal planning saves your sanity — If you get tired of hearing “What’s for dinner” repeated multiple times every evening, meal planning will fix that! I actually place my weekly meal plan on a large magnetic board in my kitchen so everyone can see what’s being served that day.
Besides the best tasting food possible, I also love that using seasonal ingredients is budget friendly. And although most food is available year round, it’s definitely worth trying to use seasonal produce whenever you can.

Ideas for Using Leftovers
- Slow Cooker Thai Green Curry: We love to chop up leftovers to use in a hearty, main-dish fried rice. Or simple serve them inside warm pitas or flatbread.
- Asian Chicken Lettuce Wraps: I actually double the chicken filling when I make this, so we can have Asian chicken rice bowls the next day. Top your bowls with fresh veggies like shredded carrots, chopped cucumber and sliced green onions.
- Greek Turkey Meatballs: Serve leftover meatballs in pita or flatbread with sliced cucumbers, tomatoes and leftover tzatziki sauce.
