I just love the convenience of the slow cooker. Whether I’ll be out working or running errands, or spending the day at home, I love to get dinner going early to ease the stress at dinner time.
Why I Love Meal Planning
- Meal planning saves money — when I plan my meals and go to the grocery store with a list, I’m less likely to fill my cart with more expensive prepared foods, or items I don’t need or won’t use.
- Meal planning saves time — at the grocery store at least. It does require some time up front, but once you start shopping, you’ve already decided what to make, and don’t have to figure it out while your standing in the aisles of the supermarket.
- Meal planning saves your sanity — If you get tired of hearing “What’s for dinner” repeated multiple times every evening, meal planning will fix that! I actually place my weekly meal plan on a large magnetic board in my kitchen so everyone can see what’s being served that day.
Even when life gets busy, if I can get something started in the slow cooker in the morning, we’re much less likely to get take-out and actually sit down to a healthy meal.

Ideas for Using Leftovers
- Leftover Brisket Barbacoa: We love using leftovers to make tacos, or burritos–just use your barbacoa for something different than you did the first time. We also love making some main dish worthy beef fried rice.
- Leftover Teriyaki Meatballs: Add some roasted peppers or grilled pineapple (or both) to these tasty teriyaki meatballs the second time around.
