Cubes of mozzarella cheese marinated in a mixture of olive oil, sun-dried tomatoes, herbs and seasonings in this super simple party appetizer.

Marinated Mozzarella Cubes

Everyone needs a super quick and easy appetizer recipe in their repertoire, and these Marinated Mozzarella Cubes are perfect for last minute guests or party invites.

Of course, they do need time to marinated, but they taste great in as little as 30 minutes. Although marinating longer will give them even more flavor.

And really, it couldn’t be easier. You just cut up some mozzarella cheese, then coat it in a mixture of olive oil, chopped sun dried tomatoes, garlic, fresh herbs and spices.

This appetizer is both easy and elegant, and it works for just about any occasion that calls for serving appetizers or finger foods.

Plus, anything you can make ahead is a win during the busy holiday season. And if you have extra after entertaining, you can snack on the leftovers all week long.

Marinated Mozzarella Cubes

You can also make this marinated cheese with fresh mozzarella balls–no cutting necessary–but I prefer the taste and texture of the cubed mozzarella.

My husband, however, loves the fresh mozzarella, so use whichever variety you prefer. They’ll be delicious either way.

And since this recipe is made with pantry staples and mostly things with a long shelf-life, I can usually keep the ingredients on hand. Feel free to use what you have handy for substitutions.

No chives? Most fresh herbs will work great. Fresh basil is one of my favorite substitutions. And you can change up the other spices and seasonings too. Or even use different kinds of cheese.

Ingredients 

  • 1/3 cup olive oil
  • 1 tablespoon finely chopped sun-dried tomatoes oil-packed
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon crushed red pepper flakes
  • Pinch of salt and pepper to taste
  • 2 teaspoons minced fresh chives
  • 1 tablespoon minced fresh parsley
  • 1 clove garlic minced
  • 1 pound mozzarella cheese cubed

Instructions

  • In a large bowl, combine all the ingredients except the cheese.
  • Add the cheese cubes and stir to coat evenly. Cover and refrigerate at least 30 minutes before serving.
