I don’t know about your family, but around here, we’d happily eat Mexican food every day of the week.
In fact, we end up doing that a lot of the time without even trying. There are just so many Southwest and Mexican-inspired dishes that we love.
Why I Love Meal Planning
- Meal planning saves money — when I plan my meals and go to the grocery store with a list, I’m less likely to fill my cart with more expensive prepared foods, or items I don’t need or won’t use.
- Meal planning saves time — at the grocery store at least. It does require some time up front, but once you start shopping, you’ve already decided what to make, and don’t have to figure it out while your standing in the aisles of the supermarket.
- Meal planning saves your sanity — If you get tired of hearing “What’s for dinner” repeated multiple times every evening, meal planning will fix that! I actually place my weekly meal plan on a large magnetic board in my kitchen so everyone can see what’s being served that day.
Even if you’re feeding picky eaters, most of these meals are easily adaptable to satisfy everyone, so you’re sure to find some delicious dinner-time solutions.

Ideas for Using Leftovers
- Crispy Slow Cooker Carnitas: The possibilities for leftover carnitas are almost endless–tacos, enchiladas, burritos, soups, stews and more! If you want to pivot away from Mexican flavors, use the leftovers for a stir-fry, or serve it on buns with barbecue sauce.
- Slow Cooker Pork Chili Verde — If you asked my family, every single person would say they’d want this dish for their last meal. It is hands-down our entire family’s favorite thing to have for dinner. So we would happily eat leftovers as is, for days on end. But if you want to change it up a bit, mix it with rice and serve it in burritos. Or simply use it to smother your favorite burritos or enchiladas. Yum!
